Not sure what to do with the stems of your coriander? Well they make the most amazing paste for fried rice! The coriander and garlic paste is from the spirit house recipe book and it is awesome. If you are not a fan of hot food you can omit the pepper corns for some salt. I just cook my rice then place in a fry pan with the paste and some oil and gently fry until your rice gets some nice colour. Mix in any veggies ( cooked or raw) and then top with some coriander leaves, sliced omelet and shallots. Splash over a bit of chilli sauce if you love a bit of heat.
- 1/4 cup garlic cloves
- 1/2 cup of coriander (root and stems)
- 1 tsps white pepper corn
- Pound all ingredients in a pestle and mortar till a smooth paste.
- Use as a flavouring to rice or stir fries.
