This great recipe paleo breakfast muffins was shared by Wendy.  Look great and tastes great.

It’s a half batch so makes 6
1 cup almond meal
1 tsp bicarb
1/2 cup desiccated coconut
1/2 cup pumpkin purée
1/2 cup low fat Greek yoghurt
1/2 cup raisins
1/2 cup coconut oil
1 egg
Combine and spoon into muffin tin or patty cases
(Always best not to over mix muffins as they seem to go more solid in the cooking)
