This looks amazing healthy lunch or dinner – brown rice tabouli and a delicious kaffir lime zest butter to melt on some lightly blanched asparagus and corn on the cob.


Rice tabouli:
Cooled, cooked brown rice
Chopped cherry tomatoes
Finely chopped red onion
Finely chopped parsley.

Dressing: avocado oil, tamari, sweet chilli oil.
Mix together all the ingredients then drizzle over some dressing, stir gently until well combined.

Kaffir lime butter:
Equal parts of olive oil and butter, zest of one kaffir lime and pepper. Put oil and slightly softened butter, zest and pepper into the blender and blitz till well combined. Pour into a bowl and place into the fridge until it solidifies. Use as you need.
