Lindy made this yummy quinoa dish. Healthy, easy and fast!
- 1 cup quinoa
- 1 garlic crushed
- 2 kale leaves
- salt and pepper
- Cook 1 cup of rinsed quinoa in 1&3/4 cups water
- Fry 1 crushed garlic clove and fry in 2 tbs olive oil in separate pan
- Add salt and pepper
- Cut up 2 Kale leaves (remove stems) then add to garlic pan until wilted, then mix quinoa in to mixture, warm and set aside
- Fry one egg then chop through it add more seasoning if desired.
Gluten free and super clean and yum!!! Enjoy
