Lindy made this yummy quinoa dish.  Healthy, easy and fast!

ingredients:

  • 1 cup quinoa
  • 1 garlic crushed
  • 2 kale leaves
  • salt and pepper
  1. Cook 1 cup of rinsed quinoa in 1&3/4 cups water
  2. Fry 1 crushed garlic clove and fry in 2 tbs olive oil in separate pan
  3. Add salt and pepper
  4. Cut up 2 Kale leaves (remove stems) then add to garlic pan until wilted, then mix quinoa in to mixture, warm and set aside
  5. Fry one egg then chop through it add more seasoning if desired.

Gluten free and super clean and yum!!! Enjoy
