This is such a tasty and simple salad to make. The contrasting colours makes it appealing. It also lasts in the fridge for a few days. Basically you can add what ever you like e.g cherry tomatoes, spring onions.


2 cups cooked brown lentils soaked for a few hours then cooked in water for 20 mins)
1 cucumber diced
1 red pepper, core and seeds removed and diced
2 large handfuls of fresh parsley, coarsely chopped
1 red onion, peeled and diced
2 celery stalks diced
1 clove of garlic, peeled and finely chopped
extra virgin olive oil, to taste
apple vinegar, to taste
whole sea salt, just enough to taste
ground white pepper, just enough to taste
chilli powder, to taste

Basically add all the ingredients in a bowl and stir through. Adjust seasoning to taste.
