This is a great alternative to the steamed veggies when you are craving something a little fancy.


  • 1 cup cubed potatoes
  • 1/2 cup cubed pumpkin
  • 1 cup cubed beetroot
  • 1/2 cup chopped zucchini
  • 1/2 cup halved red onions
  • 1 cup halved tomatoes
  • 1/2?cup sweet potatoes
  • 1/3 cup olive oil
  • 3 springs of rosemary
  • Salt and pepper to taste
  • 2/3 cup maple syrup
  • 1/4 cup balsamic vinegar

Balsamic and maple veggies

Make sure the vegetables are cut roughly into similar sized pieces. Basically you can swap and change any of the vegetables you like.

Heat oven to 180 degrees. In a large pan drizzle oil, garlic, salt, pepper and rosemary over the vegetables cook 20mins
In a small pot add the maple syrup and balsamic vinegar – heat till slightly thickened
Pour over the vegetables and cook for a further 20 minutes.


Simmer balsamic vinegar and maple syrup till mixture thickens.
