A family favourite shared by Nicky:
‘Mexican spicy rice has become a household favourite. If you want something to fill the family up then this is the answer!’
Sautée the following:
1 diced red, green and yellow capsicum
2 diced onions
3 cobs of corn
1 heaped teaspoon of both cumin and paprika
Add the above mixture to 3 cups of cooked salted brown rice.
Then gently fold through 1 or 2 cans of kidney beans.
Last of all sprinkle with chopped coriander.
You can spice it up using chilli if you want. A big blob of guacamole would also hit the spot.
