Nicky has shared a great muffin idea that uses up left over vegies and salmon.
 Ingredients:

  • 3 cups of mixed vegetables grated/or coarsely chopped (pumpkin, carrot and zucchini)
  • 1 small piece of salmon (cut into small pieces)
  • 6 eggs
  • 1/2 cup of dry uncooked polenta
  • pinch of fresh herbs (basil or oregano)
  • salt and pepper
  • handful of cubed tasty cheese

  1. Beat up 6 eggs, 1/2 cup of dry uncooked polenta, fresh herbs, salt and pepper in a bowl
  2. Add grated veggies ( pumpkin, carrot and zucchini) and salmon, 
  3. I topped them with a couple of cubes of tasty cheese
  4. place in oven heated oven for 20-30 minutes
