The weather the last few days have definitely been soup weather!  Debra has shared her Moroccan red lentil soup on our Facebook site, the best part is it looks so easy to make! Thanks for sharing:


  • 1 tsp oil
  • 1 diced onion
  • 3 crushed garlic cloves
  • 2 diced carrots
  • 1 cup red lentils
  • 2 tin x 400g crushed tomato
  • 850ml of vegetable stock ( or chicken stock if preferred)
  • 1 tbs Moroccan spice
  • corn kernels off 1 large corn

  1. Heat oil in pan and fry onion, carrots and Moroccan spice for 10 mins till soft
  2. Then add garlic and fry for 1 more minute
  3. Pour stock, lentils, tomatoes and corn into pot and bring to boil
  4. Simmer for 20 minutes till lentils cooked through
