Lunch box options that do not include sandwiches but easy to eat are often hard to think of. Nicky shared this lovely rice slice which is very filling and tasty.

Rice slice

Recipe:
2 cups of cooked cooled rice
2 cups of loose spinach lease
8 scrambled eggs…
1 cup grated tasty cheese
4 grated carrots
2 raw corn cobs, kernals removed
salt and pepper

Rice
mix all ingredients on a bowl, then transfer to baking dish. Cook on about 180 until the slice is set and the rice has gone a little crunchy on top approx 45/60 mins depending on your oven.
