Eggplants are one of my favourite foods, they taste great grilled, fried and baked.

Stuffed eggplant


  • 2 eggplants
  • 1 onion
  • 2 garlic cloves
  • 2 grated carrots
  • 1/2 cup chopped spinach
  • 1 diced tomato
  • 1/3 cup sliced mushrooms (optional)
  • oil for frying
  • 2 tbs tomato paste
  • handful fresh basil
  • salt and pepper


  • 1 diced onion
  • 1 can tinned tomatoes
  • 2 garlic cloves
  • Salt and pepper

Stuffed eggplant

  1. Cut eggplants in half and scope out the flesh.
  2. In a fry pan fry up onion and cloves of garlic.
  3. Add the eggplant flesh and grated carrots, spinach and a diced tomato. I also added some mushrooms.
  4. Once mixture softens add tomato paste, salt, pepper to taste and a handful of fresh basil.
  5. Spoon the mixture back into the eggplant halves.
  6. In another pot make up a tomato sauce- fried up onion and garlic and added a can of tomatoes and seasoned.
  7. Pour sauce around the eggplants, cover with foil and bake for 30 mins.
  8. Take foil off and bake for another 30mins.
  9. Let sit for 10 mins before serving.

Stuffed eggplant

You can basically stuff the eggplant with anything from rice to mince. Traditionally this would be served with fresh bread only, but I made up some fried kale, beetroot and sweet potatoes as a side.
