Teresa shared with us her “clean the fridge day “ cooking. What a great way of using up lots of bits of vegetables and eggs.

Ingredients

    • Grilled thinly sliced kumara
    • 1 grated carrot
    • 1/3 cup sliced mushroom
    • cheese grated 1/3 cup
    • ½ diced capsicum
    • 2 sliced spring onions
    • ¼ cup sliced ham (optional if you want a vegetarian option)
    • 2 tsps whole meal flour
    • 1 can cannelloni beans
    • 3 eggs
    • Salt and pepper

Roast veggie muffins

I cooked some thinly sliced kumara on my sandwich grill, then lined the greased muffin tins with the softened kumara. In a bowl I added grated carrot, mushrooms and cheese, chopped up red capsicum and spring onions and some sliced ham with about 2tbsp of whole meal flour. I lightly whisked 3 large eggs and tipped these and 1 cup of drained cannellini beans into the mix with a pinch of hamilayan rock salt, filled the lined tins and baked at 180 for approx 25 mins. Very nutritious and tasty.
