Simple dish that could be a lunch, light dinner or a side to a main meal. Thanks Wendy for sharing.
- Kale (blanched and finely chopped)
- Baby spinach leaves
- 1 cup quinoa (cooked)
Sun dried tomatoes
- Finely sliced red onion
- optional – can of butter beans or similar (I didn’t)
- red wine vinegar
- olive oil from tomatoes
- salt & pepper
Mix all the salad ingredients in a bowl. In a separate container mix dressing ingredients and pour over salad. So so good!
