Simple dish that could be a lunch, light dinner or a side to a main meal. Thanks Wendy for sharing.
Ingredients:

  • Kale (blanched and finely chopped)
  • Baby spinach leaves
  • 1 cup quinoa (cooked)
    Sun dried tomatoes
  • Olives
  • Finely sliced red onion
  • optional – can of butter beans or similar (I didn’t)

Dressing:

  • red wine vinegar
  • olive oil from tomatoes
  • honey
  • salt & pepper

Quinoa kale

Mix all the salad ingredients in a bowl.  In a separate container mix dressing ingredients and pour over salad.  So so good!
