Went to the markets this week and was inspired with all the fresh produce. Bought heaps of veggies and some fresh bread. Decided to cook up a Mediterranean lunch my mum used to make with grilled eggplant.
- lemon juice
- cayenne powder
- salt and pepper
Recipe: BBQ or pan fry 2 eggplants (I used the long thin type). Made the marinade with juice of 1 lemon, crushed 2 garlic cloves, 2tbs oil, pinch of cumin, salt and cayenne powder. Once eggplants are cooked, pour the marinade on top and crumble feta. Eat with fresh bread to mop up marinade. One of my favourite lunches.
