Stuffed mushrooms are so versatile. So many stuffing options and they can be eaten as a snack, side or a main meal.
This recipe uses Kale, tomatoe, onion and feta as the stuffing.
Mushrooms
Fry up onion, garlic and kale in a little oil. Add the tomatoes and fry for a few minutes. Crumble feta over the mixture and add to mushrooms. Bake for 20 mins.
