Friday afternoon treat to celebrate weekend. Pancakes made from coconut flour. My kids loved them – though they did smothered with maple syrup.


This recipe has the same texture as making it with whole meal flour.
1 cup of gluten free rolled oats ( or you can use any variety)
1/2 cup coconut flour…
4 jumbo eggs
1 cup of milk (I used half canned coconut milk and 1/2 coconut water- but you can use any milk.,
1/2 tsp baking soda
1 tbs of maple syrup

Blend in a food processor oats till they are a powder. Add the other ingredients and blend till throughly mixed. If too thick add some water.
Fry up, I used coconut oil to keep with the coconut theme.
