This is a simple dish that adds colour and flavour to any plate. Best of all it is only 4 ingredients.


  • Roma tomaotes
  • bocconcini
  • basil leaves
  • 1/4 cup balasmic vinegar

Tomato and Bocconcini

  1. Slice the tomatoes, but not all the way through.
  2. Cut the  Bocconcini and slip them I nto the space between the slices
  3. add a basil leaf between the sluces
  4. in a pot slowly heat the balsamic vinegar till it thickens, then pour over the tomatoes for flavour.
  5. Serve as part of a tapas plate or as an alternative to a salad.
