This is a simple dish that adds colour and flavour to any plate. Best of all it is only 4 ingredients.
- Roma tomaotes
- basil leaves
- 1/4 cup balasmic vinegar
- Slice the tomatoes, but not all the way through.
- Cut the Bocconcini and slip them I nto the space between the slices
- add a basil leaf between the sluces
- in a pot slowly heat the balsamic vinegar till it thickens, then pour over the tomatoes for flavour.
- Serve as part of a tapas plate or as an alternative to a salad.
