This is one of my favourite soups.

Lentil soup

Ingredients:

  • 4-6 cloves of garlic
  • 2 carrots
  • 1 onion
  • 4 celery stalks
  • 3 cups veggie stock
  • 1 cup dried brown lentils
  • 1 cup French brown lentils
  • 1 tbs tomato paste
  • 2 bay leaves
  • 1/2 cup chopped pumpkin
  • 1 tbs cumin
  • oil for frying
  • salt and pepper to taste
  1. Oven roast with skin on cloves of garlic.
  2. In a pot fry up finely chopped onion,  carrots, celery stalks for 5 mins.
  3. Squeeze roasted garlic out of skins and add to pot, as well as 1 cup of brown lentils and 1 cup of French brown lentils (small dark brown ones),and 1 tbs cumin. Stir till lentils coated with oil.
  4. Add 3 cups of veggie stock and 1 heaped tbs of tomato paste, 1 bay leaf, salt and pepper to taste.
  5. Simmer for 30 mins, then add 1/2 cup chopped pumpkin (small cubes).
  6. Simmer for 20 -30 more mins.
