Ku area and banana muffins


1 large kumara
3 bananas
2 eggs…
2 tbsp honey
1 tbsp coconut oil
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 cup almond flour
1 cup coconut flour

(I added about 60 grams of roughly chopped dark chocolate too)
Peel, chop and steam the kumara till cooked, then mash with the bananas. Add the eggs, oil, vanilla and honey until combined, then fold in the remaining ingredients and fill muffin tins and bake for approx 25 mins at 180.
