Homemade nut and chocolate bars are a healthy option to store bought ones that are filled with artificial flavours and colouring. To find the perfect lunch box bars I did a little cooking experiment. I made 2 batches, but I cooked one batch and kept the other raw to see the difference.
Why? As the temperature is heating up raw treats sometimes get a little too soft if they are not refrigerated ….in other words not school lunch box friendly.
The verdict was a split decision in my household. The cooked had a more biscuit texture, but to be honest the taste difference was subtle. I would make both again. The raw needs to be kept in fridge otherwise will go soft in the heat of the day.
1 cup Shredded Coconut
2 cups whole Raw Almonds
1/3 cup flax seeds
1/4 cup Almond Butter
1/4 cup peanut butter
2/3 cup extra virgin coconut oil (This is a great place to use Gold Label)
3 Tbsp Coconut Flour
1/2 tsp Salt
1/4 cup Maple syrup
1 Tbsp Vanilla Extract
Topping: Block of 85% Dark Chocolate, 1 tbs coconut oil, 1 tsp maple syrup heated in stove till melted.
Blend almonds to course flour. Then add remaining ingredients except the topping ingredients and blend into ball. Press into tin. If keeping raw melt topping ingredients over a saucepan and add on bar and refrigerate. If cooking add the base to heated oven for 20 mins. Cool then add topping.
