Bean sprouts are great thrown into a salad, but they are just as great cooked as a more substantive option.

Ingredients:

  • 4 kale leaves
  • 2 crushed cloves garlic
  • 2 celery sticks
  • 1 chopped onion
  • 1/4 diced capsicum
  • 2 tsp sesame seeds
  • 2 cups bean sprouts
  • 1 tsp soy sauce
  • coconut oil for frying

Heat in a wok coconut oil and then fry kale leaves, onion, garlic, celery sticks and capsicum.  Fry soften but still crunchy.  Add sesame seeds and fry for 1 min. Toss in bean sprouts and mix through while still on stove – don’t over cook, basically stir to mix but not cook. Pour in soy sauce.  Mix thoroughly then serve while still warm or serve cold. Can be a side or a main meal.
